LOL@Crock Pots. . . Maybe for kielbasi and sauerkraut but not for pulled pork. I have used electric smokers (very good at maintaining temp and smoke levels) and also have a smoker made out of a water heater (not so good at maintaining temp, but better when you don't have access to lots of electricity.
Time can be a problem, yes. That's why you need to start the day before until it's almost done, then let cool and store til the next day. Then you only need an hour or so.
