Given that I've found out that I'm sensitive to gluten, I agree. That's also why I know what Quinoa is. I don't have a real serious case, but if I eat too much gluten, I suffer afterwards.
One comment about your list: Gluten-free is not the same sort of trend as the rest. It is around because of a greater recognition that there is a segment of the population that cannot digest wheat and wheat gluten. Not because of some diet trend. Prior to the emergence of this "trend" it was difficult to find foods that could be safely eaten as gluten often is present in foods that you wouldn't normally expect to find it.
