I got my Guest of Honor brining as well. just made my own brine, a cup of kosher salt, a half cup of suger, probably about a half of a tablespoon of Basil leaves and this maple smokehouse seasoning stuff I got. Along with some red pepper flakes as well.I guess everyone decided to use Alton's brine this year. First store I went to had NO vegetable stock left, second one had one 32 oz. box left.
Used one box veggie, one box turkey stock, water salt, spices etc. I expect it'll be fine. It's out on the screen porch right now.
I put mine in this huge ziploc bag, think its like 2.5 gallons perhaps. just had enough room for the 13 pound bird along with all of the brine I whipped up. A guy I know on another website says that he's used small garbage bags before in a pinch. Figured I would put mine in one of those just in case the ziploc leaked any, and would probably make pulling it out of the cooler easier in the morning anyways.Stupid Reynolds roaster bags. Blew through the first one- No idea how. 2nd one came with a leak.. Now brining in the canning pot with a smaller lid in the pot with cutting board and most of my cookbooks on top to keep it submerged. * oven bags. Reynolds is going to hear from me!

24 lb and they didn't have zipocs bigger than 1 gal.
The bringing was a success-so far. Sitting for an hour bfeore going in the oven- to dry out a bit. Only 12 to dinner. Unfortunately including the richard cranium cousin but otherwise good company. Lil is still sleeping. Wish I was him.

Mine went in at 5 (well, part of it was earlier but then there was the REYNOLDS-you sux- oven bag fiasco. and was out at 8 this AM. THey say do it for 12-18 hours but that never seems to happen.
if they want me to go anywhere, they're going to have to deadhead me at this point. I think I'm good.
