Just my opinion of course here but I went to Scotland this last May and the weather was great, that is the exception certainly. I really enjoyed it though and would go back.
I'd try not to go to Greece in July or August, it is roasting then and if you go out of season, say to Rhodes, it is much cheaper, and I've had a great time in Athens too. My daughter tells me that Prague was great and of course you could do a lot worse than Switzerland if it's summer. It's not the beach, but they have great hiking and fabulous views. I've always wanted to go to the Basil indoors but never quite made it and it's in november.
In mexico the mayan riviera is younger, the pacific coast is the older set, but overall I'd pick Cabo as the best. There are some great all inclusive resorts there and the fishing is terrific too. I don't find it that dangerous there. I have been to the Caymans and they are great, but expensive. My experience is that Africa in general is not as safe and you have to be very careful there, though it can be done. I had a short vacation in Cape Town a few years ago that went fine.
One place i'm dying to go to is the Amalfi Coast for a week.
