USCHO Cooks: Are you our Top Chef?

Yes and No.

Street food has it's place. But so does a Prime cut of beef or fresh Tuna.

A $100+ meal isn't needed, but can absolutely be better in many ways.
 
Working on two different pizzas this week:

Chicken tinga: chicken, tinga sauce, and a Mexican 4 cheese blend

Pesto cheese: pesto, mozzarella and parmean, balsamic glaze
 
Made like two quarts of tinga sauce and maybe two pounds (before shredding) of chicken thighs.

Will be having tinga street tacos tonight. Smoked pork butt tinga tacos tomorrow. Will freeze the rest of the sauce and chicken.

edit: just realized MT made tinga in the last post. Neat.
 
Oh and in a particularly brilliant moment of clarity, instead of throwing the chicken thighs into a bowl to rest after browning, I pulled the skins off and fried them in the schmaltz and garlic until they were super crispy. normally you just set the thighs aside and throw them back in the sauce to braise. Then after cooking you throw the rubbery skins away. Not this time.

I crumbled them over the tacos for extra crunch.

My god.
 
I'm finding angel hair, butter, garlic, and an unhealthy amount of cheese is acceptable on nights when I really do not want to do much of anything.

To be fair, that would be better than several alternative visions he could have had. Like enabling remote, anonymous bullying. Or giving terrorists of all stripes the means to meet and communicate on the DL.
 
Went to Ngon Bistro for the last time tonight. :-(

Shutting down next Saturday. Just so sad to see this amazing gem close. Sounds like it just ran its course and it was time.

We would have gone at least once more but we're going to be out of town most of the next week.

Took home a to go portion of the pho broth. Going to see if I can drag my recipe up to even a tenth of what they had.

We had just found this gem back in 2020, so we were late to the game. It quickly became a favorite though.
 
Baking this week:

Double chocolate crunchy peanut butter bread

Going to buy a roll of sugar cookie dough, roll it out, bake it, and smother it with orange marmalade or fudge sauce and pecans.

I've never been to that place, but I can recommend Quang along Eat Street as a great spot for pho, bahn mi, etc.
 
So last night I was popping popcorn. I was using our stainless pot and lid since the glass lid was in the dishwasher.

I thought I heard all of the test kernels pop so I opened the lid. Turns out, I miscounted. The last one went off and splashed oil all over my face. I was at arms distance away too. My eyelid is currently peeling because it got a second degree burn. It's not pleasant.

Would not recommend.
 
Because I can't really put weight on my right foot, I've started cooking and draining Ramen, scrambling 2-3 eggs into the noodles, and trying various seasoning blends that won't put me way over the recommended daily sodium intake.
