Just reading this now. Thanks for the kind words about the cookies. Yes, I still bake them (although fewer). Here's a rundown of the past 2 years.

Good to see you are still about! I was thinking of you as I baked this yr. I made a bunch of dough- baked ~2500 cookies and then we had horrific #s and the world shut down. Ended up only giving away about a 10th of them. THe live in human vacuum cleaner (aka lil, not so lil) ate almost all the rest without baking a sweat.

Making a carrot cake cheesecake hybrid for Easter. I made the recipe earlier today as a rev 2 or 3 or something like that to a previous recipe I've been working on for a while. This time I used 100% browned butter instead of oil.

And good god. The carrot cake batter may be one of the best things I've ever put in my mouth.


edit: oh and every recipe I saw for a carrot cake cheesecake was some weird swirled mess that never looked good. Very "NAILED IT" energy even on the blogs. So instead I went with a cheesecake as a center layer almost as a replacement for the layer of cream cheese frosting. Much better plan. Never made cheesecake before as far as I can remember. But pretty good results with a basic recipe from Sally's Baking Addiction. But the carrot cake recipe is 95% mines.

edit 2: the weird thing was, and this sounds absolutely batshit crazy, but this came to me in a dream the night before my entire family came down with some illness. My mom was planning on bringing dessert but now that everyone is sick, I can make it! Anyways, the dream was of a carrot cake flavored cheesecake in the shape of a carrot. Instead of the shape and being 100% cheesecake, I went with the hybrid approach. Hard to get real carrot cake flavors in a cheesecake.

Tomorrow's baking efforts:

Everything muffins. Going to put some of the seasoning IN the muffin for extra flavor, then put some on top before baking.

Double chocolate crunchy peanut butter bread. I haven't had it in awhile.

I'm struggling to come up with new and interesting ideas.
 
Holy moly. So I trimmed the cake a bit so the cheesecake would have a flat surface. That's the best carrot cake I've ever eaten. Gotta take down the notes.
 
Made the Double Chocolate Crunchy Peanut Butter bread on Thursday. I know it was good because I had 4 different drag performers and everyone at my table keep coming back for more.
 
I've been working on my recipe for a couple years now. I would love to get up to BC some day to compare. I'm sure theirs are absolutely killer.
 
I attempted to make a coffee and chocolate bread and all I could detect was the chocolate.

I want to try again, this time maybe adding half and half using some instant coffee as part of the baking mix.
