Christmas baking:

Dark chocolate chip and crunchy peanut butter cookies
Double chocolate crunchy peanut butter bread/muffins
Crunchy peanut butter banana bread with dark chocolate chips (or as DX or St. Clown call it, "orgasm bread")

So we were planning to do some Christmas cookies and obviously came back to this thread and others for the queen's recipes. Unreal how many Jen used to make.

Didn't see any from 2020, wonder if she still reads this thread. Anyways, Jen, if you still read this, thanks for all the insane work you'd put into the cookies but also the posts with linked recipes.
 
It worries me that I've dropped 3 articles of food on the floor this week and found all of them, much later, without them having been chewed on. My cats cannot identify what I eat as food.
 
Big make ahead weekend.

Tonight: making 7 lbs of carnitas, a huge batch of award winning chili
tomorrow: big catch of picadillo, pho broth, Tinga, and meatloaf

This is.... incredible. (And I've only tasted the broth, haven't made the rest yet) In like 30 minutes of cooking and five minutes of prep. It's as good as I've had and if you told me the cooking time, I'd have asked if covid had melted your brain


I did learn a very valuable lesson in pressure cookers. When they say open the valve gradually, they really mean it. There's a fine layer of beef fat that's covering everything within about five feet of my stove.

It was horrifying. I couldn't do anything about it. It was volcano of steam and boiling fat. I didn't want to risk getting my hand close. I thought about covering it but was worried about what problems it might cause I wasn't able to think through clearly. Or having my hand covered in screaming hot fat.

So I just stood there and waited. :-(

The same time my wife learned this lesson she also learned not to have the pressure cooker too close to the cabinets.
 
I had a couple brats leftover with no buns and I conjured up the following. I sliced two brats and added to them in a small pot:

-Cilantro
-2 diced garlic cloves
-2 diced Thai chilies
-Chopped tomato
-Chopped white onion
-Tablespoon of butter
-3 tablespoons of water (approx)
-Dash of salt and pepper
-Dash of Worcestershire

Heated on medium high heat until the brat slices were cooked and the water reduced. I call it a Brat & Vegetable Medley, served it with some air-fried potato chips and it was phenomenal.

Oh another meal I made from scratch. Patti bought me some filet and porterhouse cuts before she went on holiday. I had some leftover so I trimmed them to get the right fat ratio, tossed them in the processor and made burger patties.

I fried some bacon, garlic and butter first, pan seared the burgers in that, when done added the bacon on top, some sliced onion, tomato and a homemade Sri Racha mayo.

I've been trying some riced vegetables lately as a way to eat better when I'm always working or on the go. Not a fan of cauliflower, but I'm discovering butternut squash and sweet potatoes work well for me.

That said, I'm eager to make a chicken and bell pepper pizza tomorrow with BBQ sauce.

Good to hear from you. And thanks for the update! I think you started a new tradition in our house. For whatever that's worth :-)
Don't think we'll get to this level, but who knows. We're pretty happy with like five to six varieties because, my god, does it take a lot of effort...
 
I love watching Paula Dean the most. In general, I am interested in watching shows where they cook and learn new recipes for my health diet. I love to eat and so I try to eat more healthy so that it doesn't affect my body. Most of all I like to prepare desserts with fruits - it's unrealistically tasty and healthy, I like to drink smoothies with vitamins from Canada Drugs. Friends and family often come to me to eat something delicious
