Re: USCHO Cooks: Allez Cuisine!

I've made over 10 pounds of buffalo chicken dip with celery over the last 2 days. I'll be happy not to have to do that for awhile. It was tasty though.

Made a stir fry tonight with chicken livers, anemia sucks but chicken livers, veggies on a bed of noodles is pretty freakin good

Re: USCHO Cooks: Allez Cuisine!

I'll be making one tonight. Very untraditional though and not really gourmet. Ground beef, onion, corn, cream corn, peas, mashed potatoes, and (not for the faint at heart) Kraft singles. The "cheese" melts so nicely that it tastes fantastic
As I learned last night, shepherd's pie is really about technique, not about following a specific recipe.

Yes, anemia does indeed suck, hence why I love offal. I need to try chicken livers myself...

I know Easter is coming up, and I was thinking of doing something with lamb. However, I don't know whether to do lamb chops, a full leg, or a crown roast...

My sister in Law got me some Bison, supposed to be really high in Iron, can't wait to grill it up

Re: USCHO Cooks: Allez Cuisine!

Inspired by the osso buco I had at a restaurant a few weeks ago, I set out to make own this weekend, using this recipe.

Now, I know it says to serve the shanks over risotto. For me, learning a single, 1+ hour dish was good enough for one weekend, so I just served it over spaghetti. As far as I'm concerned, when you make the tomato sauce version, pasta is just as good. :)

Excellent stuff though. The meat is very tender, but more importantly, you must use a knife to scoop out the softened bit of marrow and spread it over crusty bread with a pinch of salt. I thought it would be strong or funky, but it actually has a rich/fatty taste and nicely replaces butter.

Re: USCHO Cooks: Allez Cuisine!

Had some leftover Apple Pie Bread from Breadsmith and some extra eggs...so I decided to make some Bourbon Apple Bread Pudding. I think I may have put in a bit much bourbon...but hey, who's complaining ;)

Re: USCHO Cooks: Allez Cuisine!

Does anyone have any good main dish recipes that involve mango? They were on sale at Whole Foods this week, so now it's time to cook them.

Re: USCHO Cooks: Allez Cuisine!

Last night, I made black beans and quinoa; liked it better than beans and rice. Next time, though, I'd like to add some chorizo or andouille sausage.

Bob - thought of you, but this might be worthwhile for any interested cooks. MIT has a project called Open CourseWare - they put their classes online so that anyone interested (and motivated) can go through and basically take the class. There is one on Kitchen Chemistry which I thought might interest you.

Re: USCHO Cooks: Allez Cuisine!

This...is awesome.
Yup - I don't know why I didn't think to post it before. Most of the classes have pdfs of all their materials and book lists should you be inclined to do all the reading.

Thank you; am going to check it out a bit more.

And I just made peanut brittle for the first time. Followed the recipe from Fannie Farmer and I didn't have any problems.

Ok everyone. My first night in the new house (brand new, very nice Calphalon cookware!) is coming up and I need ideas for a first meal. :D

(Not a big fan of fish or relatively exotic foods such as oxtail.)

Got a grill yet? I'd say a huge steak, baked potato and a salad. Seems like a good first meal. Easy and tasty.

There was a thread about it awhile ago - pretty cool.

It's always grilling season

you grill outdoors in the winter? :p This year I plan to open grilling season on Opening Day. I miss grilled pizza. And steak on the grill. And burgers. And asparagus. And buttermilk grilled chicken. mmmmmmmmmmm. I love my grill.

The weather gets nice again and I'll probably be pulling out my smoker. I got a frozen turkey down in the freezer that needs to be cooked up sometime.
