My wife's grandfather sent a cow to be dressed today. I get to pick the cuts that I want, since most of it will be stored in my freezer at home. Merry Christmas to me.

Many years ago I learned how to cook when my ex bought half a cow. Make sure and take some short ribs, they seem to be one of the "hot" things you see on the cooking shows.

They're a "hot" thing you see on cooking shows because they're delicious. :D

Mr. Brought in some of my Pepparkauka cookies to give to one of the kids at school who comes from Sweden. She told him they taste just like her grandmother makes. :D They taste like what my grandmother made too.

Big cold snap here, so I made 4-cheese lasagna tonight. If that's not a heart attack on a plate, I don't know what is! (Tasty, tho'. Smells great when it's baking, too. :D)

Cooked a brisket in the Crockpot today; came out great. Wonder what else I can cook in the crockpot...

You know what I just learned? A six-quart slow cooker is a fairly large item. I'm not sure I actually have an appropriate storage space for it for when it's not in use. :eek:

Learned how to apply butter to the breast, how to tuck the wings behind the back, and learned that starting the bird at 250 for 1.5 hours, then raising the temp to 425 for another half-hour was the secret to a nicely cooked chicken. That being said, I do want to get a probe thermometer so it will turn out even better.

Also, next time I make this, I want to make a stuffing for it as well.

Consensus favorites from the Christmas treats I made: <a href="http://www.kingarthurflour.com/recipes/the-easiest-butter-pecan-kringle-ever-recipe">Butter Pecan Kringle</a> and <a href="http://www.tasteofhome.com/Recipes/White-Chocolate-Raspberry-Thumbprints">White Chocolate Raspberry Thumbprints</a>.

An important kringle lesson - if you are going to make a traditional oval-shaped kringle, make sure you have a platter big enough to serve it on. :p I ended up using a flattened cardboard box covered with foil (but did pick up a nice big platter at an after-Christmas sale for next year).

First dinner of the new year:

-Baked Brie w/ honey and almonds (hadn't had any in years, found a good imported brie at a fair price)

-Generic "garden" salad (sorry to disappoint :p)

-Tortellini with Butter Sage Sauce (admittedly, I did not make my own tortellini, but it was still a great entree that all but confirmed that I want to eat at one of his restaurants someday. I did use a bit more sage than called for.)

-$50 Chocolate Cake ("secret" recipe that has been in my family for decades ;)) w/ chocolate ganache frosting

-Cheap sparkling wine, expensive beer :D, coffee

New Year's Eve dinner - The best meal of the year. Although now my GI tract is fighting back.

Pizza rolls, my dad's secret recipe for beans (it will change your life), cheese & meat platter, macaroni hotdish, swedish meatballs, cocktail weinies, cream cheese ham and pickle rollups, taco dip, dxmnkd316 family cheese dip. That was just what I was able to cram down.

We also had chicken wings, brocoli salad, snicker and apple salad, pickled herring, about a half dozen other chip dips, and maybe a dozen other dishes.

Terrible for you, awesomely bad. Simply put, it's worth eating until you fall over.

Random note...

My dad heads a nonprofit that runs group homes for mentally disabled adults; most homes have a Christmas party, and these are a fixture at every single one. I have NEVER understood people's fascination with them.

The rest of your menu is good though. :)

I love the things personally. Plus my mom made them using homemade pickles. Delicious.
