Re: USCHO Cooks: Allez Cuisine!

Choice C. I have made that- yum.

I've made it also, its very good, have some good bread so you spread garlic on it. Roasted chicken done right is better than Turkey if you ask me

Chicken is always better than turkey, turkey sucks. Beef blows chicken out of the water, but that's another argument.
Think I'll go with the 40 cloves of garlic. Can't wait to collect the schmaltz!

I think something I can program would be preferable, so that I can leave stuff in there to cook when I leave for work and have it be ready when I get home. Not anticipating bringing it anywhere with me.
Hamilton Beach or Rival would be your best bets; top rated products without having to pay too much.

Re: USCHO Cooks: Allez Cuisine!

At Tech, my roommate had a Hamilton Beach that worked fine.

I still think the original Crockpot is the best, but then again I grew up with it, so I'm biased.

Re: USCHO Cooks: Allez Cuisine!

I have a Rival. It's not programmable, but it has low/high/warm settings, which suffices for nearly all cooking. Definitely get one of the larger oval slow cookers whatever you do - the small round ones aren't much use when you want to cook a whole chicken, ham or large roast.

Speaking of slow cookers, if I was more electronically inclined, I'd get a vacuum sealer and modify my cooker to use this setup: http://www.cookingforgeeks.com/blog/posts/diy-sous-vide/

Re: USCHO Cooks: Allez Cuisine!

Just started my first ever sourdough batter; this could either end up great or terrible. I don't think there's an in between...

Re: USCHO Cooks: Allez Cuisine!

I know I said I wasn't going to bake cookies this Christmas, but just in case, does anyone have a good sugar cookie recipe with a good frosting recipe to go with it? I'm talking traditional cut-out cookies in the shapes of snowflakes, ornaments, etc. with colored frosting...

My grandma's recipe is un-freaking-believable. Unfortunately my mom has all of grandma's old recipes and I won't be home to check them out until Christmas Eve.

Does your mother not have the ability to tell you said recipes over the phone or in an email?

Serious question as I'm sure your parents live where in the middle of nowhere seems like a happening place. :D

Yeah, I suppose she does have that ability. If I asked her, she probably wouldn't get around to it for a week or so, she'd forget for a couple days, so I'd remind her, then it would take a couple days to actually get around to sending it. :p

Betty Crocker sugar cookie pouch mix Follow directions for the drop (not roll) cookies and add 1/2 cup flour. Chill. I thought my Aunt made the dough from scratch for yrs until she let me know she did this.

Trick for rolling very thin cookies- pastry cloth and sock on pin. Use 1/2 flour and 1/2 sugar well mixed to 'flour' the cloth and pin. You can roll so thin they are see thru. We have never frosted, we always brushed with egg white wash and put on sprinkles or those little dot things.

Just made 3 batches of the sugar cookies. Saturday I made Lace, Jumbles and Chocolate treasures. Last week it was pepparkauka. Tonight peanut butter. Thinking of drizzling some of the sugar cookies with chocolate and then sprinkling some crushed peppermint stick on them. ALways trying to think of something different.

Swedish Rolled Cookies:

1 C butter
2 tsp vanilla
2 eggs
1 C sugar
3 C flour
1 tsp baking soda
2 tsp cream of tartar
1/2 tsp salt

Cream together the sugar and butter, add the vanilla, then add the eggs one at a time. Combine the dry ingredients and add to the mixture in 3 or 4 dumps. Refrigerate dough for 2-4 hours. Bake at 400 degrees for 10-12 minutes

Powdered Sugar Frosting:

2 C powdered sugar
1/4 C butter, softened
1/2 tsp vanilla
Add milk to desired consistency
Add food coloring

Re: USCHO Cooks: Allez Cuisine!

Once you find a good sugar cookie recipe, here's something you can do with the dough.

Split Seconds:

Roll out your chosen sugar cookie dough into 3/4" x 1' logs (probably 4), then flatten it out so the cookie logs are about 3/8" thick, with a finger-width depression about half that depth in the middle. Fill them with your favorite jam, and bake for ~20 minutes at 350 degrees. Let them cool 10 minutes or so, then cut them into diagonal bars about an inch or two wide and put them somewhere cold to completely cool off.

Yum

I have hickory smoked bacon, as well as a corn-cob smoked bacon. Which kind should I use?
Never heard of the corn-cob kind. Go with hickory

Re: USCHO Cooks: Allez Cuisine!

As I promised...

Grandma's Carmels

2 c. sugar
2 c. cream
1-3/4 c corn syrup
1 c. butter
1 c. nuts (walnuts are preferred)
(Do not use substitutes for cream and butter)

Boil all ingredients together except for nuts and 1 c. cream. Boil for 30 minutes. Remove from heat and add the second cup of cream; boil to firm ball (248 degrees) or less if you want a softer consistency. Add nuts, pour into a well buttered pan without stirring. When cool, cut into squares.

Enjoy!

Re: USCHO Cooks: Allez Cuisine!

I'm sorry but I've smelled smoke from corn cobs many times, it is not something I want my bacon to smell or taste like.

Re: USCHO Cooks: Allez Cuisine!

Finished all my cookies. Lemon raspberry thumbprints, chocolate/white chocolate raspberry thumbprints with pecans, brandy snaps, and eggnog snickerdoodles.

The eggnog snickerdoodles were meh (most of those got donated, anyway). The rest turned out well, although it took a few batches of brandy snaps to get the timing right for rolling them up. I might make more of those.

Re: USCHO Cooks: Allez Cuisine!

Every yr we have an open house Christmas party and we give a bag of cookies to every family/person that comes. At 30 bags now- each bag has peanut butter, jumbles, lace, sugar cookies and Chocolate treasures (all packed seperately in little snack bags). Have to pack the pepparkauka last and tack it to the outside because it is so strong it makes everything taste like ginger/clove if it is in the bag.

Usually we do this on Sat AM but Lil has a track meet. Even tho I have been baking like a fiend was worried I didn't have enough cookies. Decided to go with only a few of each type. Have plenty. When I was younger and we made cookies with all the 'women/girls' in the family we made over 3K of cookies at a go and I gave 6 of each type. Finally figured out I can't do that many by myself! Duh.

Re: USCHO Cooks: Allez Cuisine!

My wife's grandfather sent a cow to be dressed today. I get to pick the cuts that I want, since most of it will be stored in my freezer at home. Merry Christmas to me.
