Your fallacy assumes that citizens would immediately and readily take those jobs, instead of there being a gap.
I spent almost 60 nights in hotels last year, and never ran into a single native English speaker cleaning rooms - granted, I didn't spend a night in the Upper Peninsula (that's coming in February). 90% of them were Hispanics from Central/South America, or the Caribbean, and the remaining 10% were North Africans who natively spoke Arabic and/or their country's local language. That doesn't make any of them "illegal", especially at the Minny Hilton and The Marquette, where a handful were definitely FlagDUD88's dreaded SOMALIAN MOOSLIMS!1!11!! with their hijabs and all.
I'll go to my original stance: if the illegals (KEY WORD) were kicked out of the US, then many jobs would be unfulfilled at those wages, and the market would correct itself, and legals (legal immigrants or US-born citizens) would take those jobs because the wages would HAVE to increase, to fill those jobs.
Companies can afford to pay crap wages, because there are some that will take any job they can get (I don't blame 'em, btw) because they are here illegally.
