I like the stuffed pepper idea. From here on out, if I want burgers, I'll use beef or lamb.Use like ground turkey. It has less fat so can be dry if you aren't careful. I have made chicken 'meat'loaf, tacos, meatballs, chop suey- Chinese and American. Stuffed peppers might be nice.- red ones with the chicken mixture to include onions, a bit of garlic and shredded spinach that was pre-wilted and some type of grain (whole grain rice if you are into the rice thing with stuffed peppers).

Speaking of burgers, I have a Foreman for a grill, so that's out. Thinking about pan-searing them in a bit of butter and topping with bacon. Do I even need fries or chips to go along with a nice burger?
For those of us who a grill isn't a possibility - city-life, apartment restrictions, money restrictions, a grill pan is a decent alternative until you're able to remedy the situation. A grill pan produces significantly better results than a Foreman and is cheaper to obtain/maintain.
