I just want to say that there isn't much better for my soul than homemade chicken stock (rough stock). Mine currently has some matzo balls floating in it. Nourishing and comforting.

Use like ground turkey. It has less fat so can be dry if you aren't careful. I have made chicken 'meat'loaf, tacos, meatballs, chop suey- Chinese and American. Stuffed peppers might be nice.- red ones with the chicken mixture to include onions, a bit of garlic and shredded spinach that was pre-wilted and some type of grain (whole grain rice if you are into the rice thing with stuffed peppers).

Last time I bought ground turkey, I also bought 10oz portabello mushrooms, a small onion, and garlic. Ran those last three through the food processor until I had mush. Then I toasted it in a pan with a tbsp of olive oil until very fragrant and a little drier. Cooled it a bit and added the ground turkey. Made burgers. Delicious. :)

Why would anyone purposefully use ground turkey or chicken when beef exists. :confused:

I just ordered some ground chicken and I have no clue what I want to do with it. Help?

Mix some diced tomatoes, crumbled feta and fresh chopped spinach into the chicken, season as desired and grill up as burgers. Roasted red peppers could work in lieu of tomatoes but I've never gone that route. Use a nice roll for a bun, brush each side with some olive oil and toast in a pan until browned up a bit. Makes a big difference regardless of what is ultimately is going on said bun.

Tangent: I swear nothing can ruin a good sandwich or burger more than ****ty bread/buns, american "cheese" or cheap-*** ketchup or mustard. /petpeeve

I like the stuffed pepper idea. From here on out, if I want burgers, I'll use beef or lamb.

Speaking of burgers, I have a Foreman for a grill, so that's out. Thinking about pan-searing them in a bit of butter and topping with bacon. Do I even need fries or chips to go along with a nice burger?

I might suggest a cast-iron grill pan, you get the marks and great flavor. Use it in the oven with your broiler or crank up your stove top.

Made turkey portabello burgers last night. Ground our own turkey from some tenderloins, mixed with 10oz ports, onion, and garlic. Grilled 'em up and topped with a little mayo, lemon, scallion sauce. :) Woodstock Inn Pig's Ear Ale too!

A grill pan is on the wish list. Depending on the job hunt, I might buy one after I'm hired somewhere.

Found a recipe for cake that set me drooling last night: Chocoholic Supreme. Here's the ingredient list:

Chocoholic Supreme:

Cake:
8 oz dark chocolate, roughly chopped
2/3 cup AP flour
1/3 cup almonds, finely ground
1 tsp baking powder
1/4 tsp salt
1/2 cup butter, softened
3 eggs, separated
3 tbsp orange liqueur (since orange liqueur is expensive, turns out you can use 2T OJ and1/2 tsp orange extract)

Frosting:
8 oz dark chocolate, rough chopped
1/2 cup butter, softened
1/4 cup orange marmalade
2 tbsp orange liqueur

dx has it right.....what is the point of making a good burger if you're going to ruin it by cooking it in a pan. Use the **** grill.

For those of us who a grill isn't a possibility - city-life, apartment restrictions, money restrictions, a grill pan is a decent alternative until you're able to remedy the situation. A grill pan produces significantly better results than a Foreman and is cheaper to obtain/maintain.

Fresh arugula and lettuce from the garden, a little panchetta (sp) sizzled, grape tomatoes~ tossed with maple balsamic vinegrette. YUM!

In an effort to eat healthier, I tried to make 100% whole wheat pancakes tonight and burned them.
