After ranting and railing against boxed macaroni and cheese for the past several months, I decided to give homemade mac and cheese another try. Compared to past efforts, my bechamel was not clumpy, the English cheddar provided a nice bite, and as I found out, whole milk is my flavorful friend. Using skim and 1% milk resulted in a roux that tasted like cardboard... may those milks be forever banished from my kitchen.

Has anyone seen canned pumpkin in stores yet? I know there was a shortage and it was supposed to arrive in September, but I've only seen the pumpkin pie mix, not plain canned pumpkin.

So I just made my first ever potato salad. Next time, I need to let my potatoes cool after I drain them... it looks like I'm serving cold mashed potatoes.

No clue, but that reminds me. DQ's pumpkin pie blizzard is back. Oh how I love that blizzard.

That can also be the type of potatoe you used. Some hold their shape better than others.

This is true; I used Russet when I should have used Yukon Gold or a round white...

IIRC, we almost always use Russets. Never had this problem before. You want a starchy potato for potato salad. YG probably wouldn't stand up to the mixing.

Growing up I always hated two mainstays at all of the family gatherings: Beans & potato salad. My dad's recipes are pretty **** good and changed my mind about both. His recipe for beans is earth-shatteringly good.

I used to hate the classic mayo & egg potato salad, but in the last couple years I've started to come around to it.

Speaking of mayo, I'd like to learn to make my own; don't think I'd hate it as much if I made it myself. My chief complaint is that restaurants either drown the sandwich in it or they barely put any on.

And I made oven-baked brown rice tonight; turned out perfectly. Finally managed to get rid of that burned/crunchy taste.

Thank you! I want to start making my own mayo, tartar sauce, horseradish sauce, mustard, and ketchup after I finish the Detroit marathon.

As for tonight, I'm looking at either slow-cooked pork chops or pork Milanese. Instead of frying the pork chops with flour or bread crumbs, I'm actually thinking of using cornmeal. Ah hell, might as well try making cornbread this weekend, too.

Go to a farmers market or road side stand and pick up eggs that actually taste like eggs.
Started doing this a couple weeks ago; I'm never buying eggs in the supermarket again.

Also, before I leave for the Detroit marathon, I want to make pork chops and apples; any suggestions?

Don't have any chickens right now but in the past I've had as many as 75 so I know what eggs taste like:D

Made the caramel apple cake from the new Baked cookbook. For some reason, I have trouble getting their frostings the right texture - they are too soupy (had the same issue with their Malted Milk Cake). The cake was pretty good, the frosting was a little sweet because I had to thicken it with more sugar, but the homemade caramel sauce - amazing. So much better than bottled, and very easy to make. Luckily I have a lot of caramel left over. :cool:
