There are any number of restaurants in Colorado in which I've had pecan encrusted elk with a lingonberry demi-glace. I enjoy elk and the high end restaurants in ski resort towns in the state often have elk entrees on their menus. The Buckhorn Exchange and The Fort here in metro-Denver have it, too.
Antelope is pretty good. For a game animal I'll put it above Deer and Moose, but IMO nothing's as delicious as an Elk steak.![]()
