I do this as well. I have quite a bit in my target funds (maybe 75% of my 401(k)s and IRAs) and the rest is in an S&P 500 index fund, a more aggressive small cap fund, and a growth fund. I also have a couple of brokerage accounts where I have some individual stocks.
But I agree with Drew. Target funds are perfect for someone who doesn't want to actively manage their 401(k) and IRA. Take an annual look (or quarterly, at most) at them to make sure they match where you want to be in terms of risk and aggressiveness. But for the most part, they are fantastic options.
The way to go with your 401K is to put all your money in target date funds. They handle all the balancing and the fees are usually pretty reasonable.
As far as buying and selling on your own there are plenty of websites where you can do it. Make sure you take your time doing your research before you sign up for one though. I would be very careful how I access the account to.
