Oh god, I think low carb airheads just passed vegans on my "super annoying" list. I was told tonight that because I eat bread and potatoes, that I'm eating poison and the toxins.

My response: how deep is the *** groove in your couch?

Not very. Probably starving to death.

She thinks zucchini is an acceptable sub for pasta, and cauliflower is a replacement for mashed potatoes. Last time I had dinner with her, I went home and ate some more, because she didn't serve any starch.

Having done both, I'm not sure what you beef is- why is it bad to use a veggie substitute? I get the thought of not listening to their rants, but I don't see why it's a bad thing to use spaghetti squash instead of spaghetti nor roasted cauliflower for potatoes, if one chooses to. They both taste quite good.

Pasta on it's own has no flavor, neither do potatoes- it's all how they are prepared.

We did atkins for quite a few years, and it works really, really well. Brought me back from the brink of TII diabetes.

I gotta agree. Spaghetti squash is awful.

That may be the issue, but does it mean you can rag back onto them, suggesting that their food isn't real food???

That's what I question. Especially when there's noting wrong (except taste, if cooking is a challenge) with the substitutes. They are just additional veggies.

In December 2003, I weighed 396 lbs, wore a 3XL shirt, size 54 pants, and had trouble climbing the two flights of stairs to my dorm at NMU without huffing and puffing. In January 2004, I decided that was enough, so I had to make some changes. Since that time, I've been getting it on ALL sides, calling me "unhealthy" and that "you eat poison" just because I occasionally enjoy a muffin from the corner coffee shop. In fact, here are some of the charges leveled at me:

"You're unhealthy because you don't eat organic."
"You're gonna get cancer because you don't eat Paleo/organic/whatever"
"Gluten is killing you."
"Dairy, legumes, and sugar are killing you."
"You shouldn't run marathons/endurance events because that's not natural"- to this I say, and I suppose sitting there, staring into a glowing plastic box IS natural?

I've had enough.

BTW, my response to the organic crowd is almost always, "I've been eating carbon-based food all my life."

- I do feel it if I eat "white carbs" (pasta, white bread, potatoes); I get tired and sluggish

What I also notice is since I went to diet Dew from regular I can taste the sugars in things like crackers (more white carbs).

But the biggest things I've learning driving this body around: drink more water and move around more than you think you need to. <-- Admittedly both of those are hard to do.

I have an active job and go through about 2-3 liters of water a day. Rarely drink pop. Iced tea is my beverage of choice.

Water intake for a person who works a desk job, and is not partaking in heavy exercise, is to take their body weight in pounds, cut it in half, and drink that in fluid ounces. I'm drinking about a gallon of water or water-like substances every day.
