If you’re brewing with cellaring I’m mind, it mean you are imparting flaws hat need to be corrected. Brew a better beer.

When I’ve done verticals I find anything past a year old tastes like cardboard and old coffee grounds. Those flavors are far more pronounced compared to the awesome coffee, fruit, and barrel aromas and flavors that are lost after even six months.

I’m not saying never. all I’m saying is people are aging them too long. 2-3 months tops 99% of beers. 1 year for 100%. And at that point, it’s not aging, it’s just laziness.

I am of the opinion that 1-2 years is prime in general. 5 years.....max, maybe MAYBE. The latest "need to have beer" being CBS, I say 6-8 months, for that maple flavor to really pop. I've found the same in other breweries' beers, too, with that style. Evil Twin's Even More Maple Jesus being the latest one. Fresh? You get a hint of it, but not super noticeable. Wait a couple months? Boom. There it is. There is what is advertised.

You say brew a better beer? Well, when more than one good brewery (as in, nationally recognized) has the same traits.....they might know what they are doing.

Or they have someone who studied marketing for more than a week.

It wasn’t even more than a few years ago that they used to say you should age Pliny. Right.

Age Pliny. That's just dumb. You do realize the stout/porter style was so they could hold up over time, right? For voyages and stuff?

Porters were not brewed for voyages. You’re confusing that with IPAs.

And you realized that warm IPAs that are old lose their flavor profile rather quickly. Learn your beer. It's different than wine.

This little snippet speaks volumes:

took longer to spoil than other beers, increased in alcohol content with age, was significantly cheaper than other beers, and was not easily affected by heat.

India Pale Ales were just ales that were extra hopped to protect against spoilage on long trips to India.

Porters and stout porters were not. There is zero mentions of travel or voyages in the Wikipedia article you linked. In fact, it says that almost all porters were brewed in London and sold at pubs. Not enjoyed on the months-long voyages to the indies or new world.

Oh FFS, thanks Gurt for dragging me, the alkie, into this.

Dx is correct. "India" is part of the IPA style name for a reason - hops and alcohol are both natural preservatives, so high-ABV IPA (what brewers would probably call "Imperial"/"Double" IPA today) was brewed to be shipped to the India colony, where officers enjoyed it straight up, and it was diluted for regulars, just like rum/grog in the Caribbean.

Brent is also correct with specific regards to the "imperial" stout style. It is said that was originally brewed as a trade item for the courts of the Russian czars (hence why high ABV stouts are called "Russian imperial stout" today). The high ABV was used to preserve it for the trip to St. Petersburg/Moscow.

I have absolutely had beers that taste better with age. The best Darkness I've ever had was 2012, with about 4 years of age on it.

Just because you don't specifically like them better age, doesn't mean that others don't like the change in flavor profiles that come with age.

Especially, when you look at Lambic. Those develop so much with age, it is crazy. Old Lambic is really, really good.

One thing that I will say is, it is pointless to age pasteurized beers, like that Inbev stout that everyone goes gaga over. Its pasteurized, the yeast is dead, there is no point in aging it, because the only change will be oxidation, no additional yeast action will happen. Live beers do develop with time.

Beer dorks are super cute. We have a couple at my work who go round and round just like these two.

We have several local brewers, many of who are heavily into the scientific chemistry of beers. It's great to talk to these guys (sadly, always guys). They know more biochem than an MIT PhD.

One of em tried to get me to ride along to Des Moines - probably a 6 hour round trip - just so he could get 2 more bottles of some special release.

Nothing compared to cigar snobs who will fly to third world countries to get their hands on some rare f-cked up leaf that only grows on the eastern slope of the Forgotten Valley once every fifteen years and it's the middle of a civil war there now so bring bandages and antibiotics to barter with the slave children.

I think I’d rather do the third world country thing. And I don’t smoke.

While I am a beer drinker, this season we're moving on to eggnog. Will be making my mom's traditional eggnog for our holiday gathering (rum based) and starting a batch of Alton Brown's aged eggnog (Hennessey, Knob, and Meyer's). Makes about 3 liters, so I'm thinking of putting it in pint jars and sampling every few months to find the sweet spot. Per AB, it's quite good even after a year in the fridge. Serious Eats says 3 weeks at a minimum to get good flavor. Per the comment section (which is amazingly refreshing and enlightening about how awesome comment sections can be), this is even good after 2 years. Most important is air airtight seal and refridgeration.

Thecomicbookguy has a spreadsheet and photo log of the bourbon he ages in our home barrel, thinking of doing something similar with the 'nog.

Mookie saw some thingy on fb the other day on making egg nog. Looked very tasty, may try it since Mookie has 3 weeks to kill.....
