Hate to pee in anyone's Cheerios, but most people are already serfs. Everything they have, the little plot of land they live on, their ability to get medical treatment, literally their ability to eat, is dependent upon their lord (employer.)

Correct. And the only thing the serfs have to protect them is the government.
