Well, you know Schnitzel. Kaiserschmarrn is one of the best desserts I’ve ever had.

It’s like an eggy pancake with almonds and rum-soaked raisins. Then torn up and caramelized in the pan. Served with apple compote (or other fruits) and usually dusted with powdered sugar.

Make it bourbon! Or whatever liquor you like. Or just plain raisins or leave them out. ;)

Oh sweet Jesus. That was good. My house smells just like the inn we stayed at.

The extra effort to clarify enough butter to cook in was so worth it.

And for dessert, the Kaiserschmarrn was a little bit off. Still tasty but not quite there. It needed a few more minutes in the oven before it was combined with the caramel. The stewed apples were super easy and quite good on top. I also need to cut back on the overall recipe. It was slightly too much for my 10.25” cast iron pan so flipping it was kind of a mess lol. First time recipes are always fun haha.

I also figured out what the flambé liquid was at one of the restaurants. I thought it tasted like a rum aged in port or sherry barrels. I was close. It had to be the rum the raisins were soaked in. I gave it a little taste and it was almost the exact same.

Easter: either a ham or a flatbread. Ham is my safe bet.

Easter brunch: eggs, bacon, roasted portobellos, and toast.

Was at Quik Trip, of all places. Saw bacon wrapped pork tenderloin medallions on sale for 0.99. Figured what the hell, may as well try them. Gave them a little rib rub an hour before I started cooking. Then seared them at a high temp in a pan, maybe 30 seconds per side, until both were browned. Finished in the oven. They were actually very good. For 99 cents a piece at Quik Trip.

In theory, adding peanut butter should make any recipe better. In practice, far too many places get it wrong. I don't know if they're using the wrong (bad?) PB, or if they wrongly don't think it should be a/the featured flavor in the recipe. Either way, I've been scorned too many times on the PB baked goods front.

If I were to make a peanut butter banana bread, I would make with frozen morsels/pieces of peanut butter (or peanut butter chips, but I haven't really liked the ones of those I've tasted), so the peanut butter isn't spread out through the batter, but in little pockets within the bread. I think you'd maintain the original peanut butter flavor, and not muddy it with all of the other flavors in the batter.

I'll have a test kitchen. I'll try version A, where everything is mixed in, and a version B, which is what bb_dl described.

I bought something called coffee flour (made from powdered beans, I guess). Says you can use it for baking. I am thinking I might try it in some banana bread or brownies. Had never seen it before.

How is that not just slapping a fancy label on a Turkish grind? :p

This is finer than a fine grind. $3 for 8 oz. Figured it was worth an experiment. I've used espresso powder before, but always in small quantities. This claims to partially replace flour, rather than being added to it (they have the conversions on the package).
