I had some leftover pie dough in my freezer and some Callebaut gianduja, so I made the filling from<a href="https://www.kingarthurflour.com/recipes/chocolate-chocolate-hazelnut-pie-recipe">Chococlate-Chocolate-Hazelnut Pie</a> for Pi Day. The marshmallow fluff made me a little nervous, but it turned out well. Now I have extra fluff that needs to be used somehow.

Trying Zakarian’s bucatini bolognese tonight. The house smells quite nice right now. Debated homemade bread but decided against it.

I have a bacon and Brussel sprouts recipe from one of the Food Network shows (don't ask me which one). I'm going to give it a whirl tonight.

4 strips of thick cut bacon - fried in a pan
2 tbsps. unsalted butter, melted
1.5 sweet onions, sautéed in the bacon fat & butter
1lb of halved Brussel sprouts, sautéed in the bacon fat & butter for about 10 minutes.

It's 100% healthy because of the sprouts and onions.

You didn't seem to mind the dish with brussel sprouts at Travail...

That was the swordfish one? Which also had a cracker, pancetta mayo, lemon, pickles, fried pancetta, and the aforementioned swordfish? Probably muted the flavor. :D

Yeah, that's the one. I really thought the brussel sprouts shined in that dish. huh. :p

Brussels sprouts are amazing, and should never be besmirched.

blech. got some at the farmers' market once. roasted them with balsamic vinegar and maple syrup ("even people that don't like brussels sprouts will like these!") threw them away after one bite. my house smelled like feet for a week. didn't like the taste or texture. or smell.

Also, broccoli needs to be cooked right. Roasted with a small amount of a reduction of sorts is my wheelhouse.

I had some broccoli down in Austin, TX prepared this way and it changed my worldview on broccoli.

Cooked to death or raw is kind of gross.

Broccoli is unforgiving like spinach. It has a tiny cooking window within which it is godlike, but outside that window it is offal.

Cooking those things is like brakes -- you don't do it yourself, you go to a professional.

Reporting back on the Brussel sprouts recipe - it was really good. We reduced the amount of onion from 1.5 large sweet onions to just one medium onion as my fiancée doesn't much like them. She thought it was great, just as I did. I'm far from a professional cook, and it was an easy recipe to get right. My biggest issue was prepping the Brussel sprouts for cooking - halving them was far from a 50-50 affair.
