Re: USCHO Cooks: Maybe We Can Beat Bobby Flay

Went to Travail tonight and they served us a 28-plate, seven-course tasting menu.

If this was a ten, I haven’t had a meal above a six in my life. It was breathtaking.

Best restaurant experience around, by a mile.

So worth it if you can get a seat while you're in town for the FF? Looks like that is available on Wednesday before the games....

I'm clapping for you.

I don’t know if you’re being sarcastic, but I’m generally not a super-adventurous eater. This was kind of a big step for me to branch out. To have this many things I would never consider ordering at a restaurant is crazy. It’s also kind of amazing to have this kind of range at a single meal.

Yes, definitely. You will need to buy tickets ahead of time from their website. travailkitchen.com

They have 2 seatings per night, you'll want the 20+ course tasting menu (we didn't do the drink pairing option, we like to order our own).

The only 2 things I haven't had are on the bottom. Googling I may have had the Guanciale

Some of them we had alot when I was a kid

Re: USCHO Cooks: Maybe We Can Beat Bobby Flay

I've had everything on dx's list except the jowl bacon. Escargot, crab, and black truffles are all rather overrated, IMO.

Re: USCHO Cooks: Maybe We Can Beat Bobby Flay

So I’ve been working on my pizza crust for a couple years now. I have resisted using white sugar in it until tonight. Even half a teaspoon totally changed things. Much closer to the crust I’ve been looking for.

Same for me, I had eaten all that before I was out of high school except Guanciale. Thanks Mom. We smoked jowls on the farm though so not Italian guanciale but close
