USCHO Cooks: Maybe We Can Beat Bobby Flay

Re: USCHO Cooks: Maybe We Can Beat Bobby Flay

If I can share one bit of holiday baking wisdom this year, it's this: avoid anything with the phrase "finely chopped dried figs" unless you are actually buying the figs already finely chopped. That is all.

Did you try using scissors, and/or occasionally dunking your blade(s) in hot water?

I do the water trick all the time when mincing garlic, except obviously I use a chef's knife.

Too much to clean for chopping one item.

Great for salsa and garlic sauce though.

Is it really though? I mean, toss the bowl in the dishwasher and clean the blade with a sponge/towel/whatever. Really it's a marginal extra effort compared to using a knife and cutting board.

Food processor won't cleanly chop sticky, gummy things very well.
Repeatedly spraying the knife/dipping the knife seems like more effort than just chopping and dealing with stickiness.
Freezing would work nicely. Don't know why I didn't think of that - I do it with soft cheese.

I am done. Somewhere in the neighborhood of of 1280 cookies (I didn't count the bark).

Better than I thought: cherry pistachio biscotti, hot cocoa cookies
Slightly disappointed: chestnut fingers, fig spirals, GF molasses did not turn out as well as last year

Rice Krispie trees were a pain in the *** to decorate, but they're very cute and festive.

Ended up making cherry apricot bark instead of ginger bark. I haven't tried the fruitcake yet - wanted to let it sit a little longer. Getting everything packaged up tomorrow.

I made the much-lauded dark chocolate raspberry pie bars. They're awesome, but - how do you de-pan them, jen? My attempt was messy due to the crumbly crust.

Made a couple of Chocolate Cinnamon Babkallah for Christmas gifts. Pretty and fun to make - but I wish I could see the swirly inside. Maybe I'll guilt someone into cutting into theirs on Christmas. :)

I use parchment to line the pan, then lift the whole thing out after it's completely cool (or stick it in the fridge to cool after a while).

This was good - Cheesy Chicken Enchilada Soup. I used half the cheese (because that's all I had), and it was still very tasty. I also subbed 8 oz tomato sauce (no salt added) and one of those little cans of tomato paste for the diced tomatoes, since I hate diced tomatoes in soup.

Re: USCHO Cooks: Maybe We Can Beat Bobby Flay

My dad has requested steak for Christmas dinner.

What goes with the steak?

I like mashed potatoes and green beans (steamed/boiled then shocked - then sauteed with olive oil, salt, black pepper, topped with almonds or walnuts). I also like onion jam or bacon jam.

I like twice baked potatoes (plenty of easy recipes online) and roasted Brussels Sprouts (I just drizzle them with olive oil salt and pepper, wrap in tinfioil and bake til soft... Then top with a bit of vinegrette).

This except potatoes should be mashed. Asparagus roasted with a little olive oil for about 20 min at 400F
I haven't had a potato in over 4 years but I dream of baked not mashed :)
