I made praline pecans tonight without the aid of a candy thermometer. Mine went missing, so I used a bowl of cold water to see when my sugar reached the "soft ball" stage... and it worked. Honestly worked better without the thermometer than with it!

Trying to stay away from Gluten due to intestinal issues,also staying way from any processed food. Made Teff flour pancakes this morning, not bad at all. The recipe had no eggs in it, next time I'm going to substitute a few eggs in it. Tonight Almond flour biscuits

Just made habanero salsa, Russian dressing, and a ground beef hash with habanero. I can finish the hash in the oven later tonight.

It was a good excuse to work on my knife skills; they need all the help they can get!

Left my homemade energy bars in the oven a bit too long and they burned. D-mn. Oh well, live, learn, and try again...

Slow cooker brisket. Jeebus.

Apple cider, beer, about 8 cloves of garlic, peppercorns, cumin, allspice, mustard seed, 12 hours. It **** near fell apart when I took it out. The allspice made the house smell insanely good.

Tried the energy bars again; baked em for half the suggested cooking time and they turned out GBD (golden brown and delicious).
Bob - did you post a recipe for these? I use them to get through 14-hour days at work and to power through the drive home after late classes.

Recipe for Piper Power:

1/3 cup honey
1/3 cup (5 1/3T) butter
1/2 cup Demerara sugar
1/2 cup coarsely chopped walnuts
2T pumpkin seeds
2T sesame seeds
2T sunflower seeds
1/2 cup raisins (or try dried cranberries or chopped dates)
3/4t cinnamon
Dash of salt

Preheat oven to 375.
In a 3 qt saucepan, melt the butter with the sugar and honey, bringing to a boil over low heat. Simmer until sugar is dissolved.
Stir in the dry ingredients off the heat.
Press mixture into an 11x7 baking dish.
Bake for 15-20 minutes, or until golden brown.
Remove from oven, wait to cool completely, then slice and serve.

I've seen it in regular or upscale grocery stores (I have a hot buttered rum recipe that uses it - considerably unhealthy :))

I picked mine up at Meijer, a regional big box retailer. It was $3.50 for 2 lb, but my dad and I use it for coffee too, so we'll get our money's worth.

Is it the same as Turbinado sugar?, Hannaford carries it

It's close. From BakingBites.com:

Demerara sugar is similar to turbinado sugar in that it also has large, irregular grains and a light brown color. It is unrefined and produced in such a way as to turn out very large crystals, larger even than those of turbinado sugar. The sugar still has lots of natural molasses flavoring, which makes it a popular sweetener for teas. It works in most recipes that call for plain sugar, although the resulting cookies will sometimes have a slightly crunchier texture and cakes may have a less-fine crumb.

In other words, turbinado can be used interchangeably with sugar with no effect, while demerara can leave your cookies a little crunchier.
