Re: USCHO Cooks: Allez Cuisine!

Made spaghetti a la Puttanesca tonight, and the anchovies didn't overwhelm everything else. Think I'm going to make it again...

Re: USCHO Cooks: Allez Cuisine!

Made Biscuit recipe and Pancake recipe. Next time I'll add bit more butter and maybe tsb of honey/sugar.

So biscuit is cookie recipe minus (sugar and filling and less butter). And Pancake recipe is just biscuit recipe with more liquid (less butter).

No wonder food companies add so much chemicals (artificial flavor and colors) and extra sugar/salt since the basic ingredients is the same. and try to differentiate themselves with commercials and packaging. And I used to pay extra for pancake mix and it's just flour with baking soda/powder (butter extract or artificial flavor).

Re: USCHO Cooks: Allez Cuisine!

Made homemade Oreos last night, using a recipe from America's Test Kitchen. Granted, the dough was misshapen and I probably cut the cookies too thick for baking, but overall, not bad for the first attempt.

Re: USCHO Cooks: Allez Cuisine!

Made Pizza dough using Easy Pizza sauce minus all the spices and tomato paste. replaced with salt, pepper, cayenne, garlic, onions in 15 oz Hunts tomato sauce. Used 2 cups of flour instead of 3 and it looked similar to 12" Digerno.
Topping: onion, olive, mushroom, jalapeno, Cheddar cheese.

Came out better than expected using Cheddar. Next time I'll add bit more cheese and sauce and cook it at 425F instead of 400F. Bread was bit pale but cooked.

I might have to try the French Pizza I saw recently: using sour cream + cream fresh (creme fraiche) as the sauce and cooked onion + cooked bacon + cheese as topping.

Re: USCHO Cooks: Allez Cuisine!

Serving up braised short ribs in Merlot tonight with a side of mashed potatoes. Browned em in butter before adding them to the crockpot; I was tempted to use bacon grease, but then I realized that the ribs were fatty enough and didn't need much additional help.

Re: USCHO Cooks: Allez Cuisine!

I'm making a Anti Pasto Calzone tonight. Got the idea from Giada:D

Not sure if this photo will load. Made a giant chocolate "cupcake" with a white chocolate candy liner and caramel buttercream frosting. And an individual chocolate cheesecake with chocolate topping. I know the frosting needs work on the joining of the cake and liner - it's not the usual frosting I use and I'd never made this shape of cake before. Clearly, more people need to have birthdays so I can try again!

Clearly I need to have you live closer to me!
No, she needs to live closer to me! :p

Between her cakes and my brittle/nougat, 'ewe and I should hold a bake sale. We'd sell out in a matter of minutes.

Who needs a birthday? Celebrate because it's [insert random item here]day. :)

Re: USCHO Cooks: Allez Cuisine!

onion, olives, mushroom, bell pepper, tomato. vegi
pineapple, ham (canadian bacon) hawaiian
onion, pepperoni
onion, sausage

I think i'll top mine with all the vegi and whatever meat/seafood I got in the fridge.

I know Canadian Bacon/Ham is very popular with pineapple but I think it is a victim of it's own popularity. It's like people are programmed that if they want pineapple on pizza then CB must follow. Canadian bacon tends to be a fairly mild meat by pizza standards. I think the pineapple really shines when you can pair it with something that underscores its sweetness, like pepperoni. The combination of the spicy, fatty pepperoni with the sweet fruity pineapple is phenomenal. I'll never have Canadian Bacon on pizza again :)

Re: USCHO Cooks: Allez Cuisine!

That's one big cup cake :D

I noticed eating pancakes with "butter syrup" (HFCS, corn syrup, sodium something or other for preservatives and artificial flavors and colors).
And noticed it had no butter, just High Fructose Corn Syrup with chemicals.
Time to make my own syrup.

Yeah pepperoni was great till they started adding chicken to it. One of my favorite topping was pepperoni and onions.

Any of you grind flour using coffee grinder or food processor?
Sounds like a great idea but not sure if the equipment wears out/break down faster if you use it for this purpose. Thinking of grinding rice and corn and possibly other grains if I can find them cheap.

Maple syrup. From the tree. Other stuff- swill.

Re: USCHO Cooks: Allez Cuisine!

Thinking of making this soon, even though duck is extremely hard to come by in this town.

And I'm still trying to find kidneys, tripe, brains, sweetbreads, etc. The internet isn't helping...

I have a grinder that I use for spices. Depending how often & what you use it for, the grinder could wear out faster. Just make sure if you're using a grinder for something, keep it that way (ie if you use it for coffee, only grind coffee, if you use for spices, only use for spices, etc). Not sure I would use one for flour as it may not grind quite as fine as you want and most grinders only have a capacity of around 1/2 cup (kind of a PITA if you need more than 1/2 cup at a crack) Here's some info I found with a quick google search.

Who the heck doesn't like peas? BTW can I come for the hors d'oeuvres? I wish someone besides me would eat lamb here. I'll tell what I miss is fresh lamb, when we were growing lambs, those babies were some tasty
