You can try posting on the UVM thread. The only mention at the time there was to an Instagram post which I assume was https://www.instagram.com/p/Ca80KFhAUQi/. It states

He also answers many replies there, but I didn't see any insights.

I don't have any special insight, but I think sometimes guys just are looking to do something different after dedicating most of their lives to hockey. He had graduated, and it looks like he got a good job to start his professional business career.
 
The Barnsider in Colonie still has one that starts at $30.

That place is actually really good, I work right next to it and didn't discover it until I started working at the job.

Supposedly a Ruth's Chris is going in on Wolf Rd. where the Macaroni Grill used to be.

Ruth Chris down here is fairly expensive. Cuts of meat are very good but a bit over priced. We still have some really good family owned places as we go inland that are reasonable. usually we hit them after the home games at Princeton. Anything near the Jersey shore however you might need to take a bank loan to dine there.
