One thing I'll chime in with here:
I notice a lot of people seem to be staying downtown. Living here, and were it me, I'd forego that option and stay somewhere in the slew of hotels up along 35W. Might be an even quicker in/out to Dinkytown and could also be a few bucks cheaper.
I also would not recommend taking a cab down there (unless you all plan on getting drunk, which I can fully appreciate). Waste of time and money. Parking around there is not much of an issue, really. Don't forget, the Ridder is right next to Williams Arena and Mariucci Arena. If the area can routinely handle Gopher basketball and hockey games -- not to mention 40k people for football games as TCF Stadium is right there too -- it's not going to blink at this. Even on a Friday afternoon. I forget the lot numbers but BDR has them in his guide. Park there or in the ramp. Short walk either way.
As for lodging, just google "Roseville, MN hotels". Oh, and don't stay at the Super 8 on University unless you're big on leather, spandex and fetish parties. Just a thought.
