How far do you want to stay? It's also opening weekend for the Twins. Close suburbs to St. Paul are: Maplewood, White Bear Lake, Vadnais Heights, Eagan, Mendota Heights, South St. Paul, Woodbury, Oakdale, and Roseville. All of them have good places to stay. The Mall of America/Airport area hotels are close, but the prices may be higher. I can list specific locations if needed when I'm not on my phone. I can also list good food locations that won't break the bank'

aside from the Twins being in town, there's a ton of shopping to be had in the Twin Cities. Head to the Mall of America for a day, take in the sights there. Head to downtown Minneapolis and walk down Nicollet Mall. On the St. Paul side, the Science Museum of Minnesota is really interesting and informative. If you're interested in getting out of town, you can take a 2 1/2 hour drive up north to Duluth and take the North Shore Drive to get great views of Lake Superior.
