Favorite Brand of Hot Sauce...

I have come to the realization that there are very few foods in life that are not substantially improved by a generous application of good hot sauce.

Here are my top 5 - what are yours?

1. Harissa Sauce from Tunisia - Fiery hot, smoky and sweet at the same time, this stuff adds a flavorful nuance to so many foods.

2. Oaxacan black mole from Mexico - Make this one at home and it takes most of the day with over 20 ingredients, but the peppers add a spicy base to the chocolate and cinnamon overtones.

3. Tabasco - Perhaps America's greatest contribution to global cuisine. I buy it by the big bottle. Go to Lousiana and see the factory.

4. Sriracha - The "rooster" and all those languages on the squeeze bottle are just the beginning. This is a versatile, garlciky sauce that goes great on many things.

5. Cholula - A Mexican entry, kinda fruity, but deceptively badazz kick at the finish.

Only 1 - Original Tabasco sauce. I use it like my wife uses salt.

Edit - although the red hot sauce at Noodles is also pretty darn good, at least on the Thai dishes. Is that what your #4 is?

Sriracha is great on many things, but for my money, Frank's is tough to beat, and I'm sure I'll catch plenty of flack for that. But I love it, and its cheap.

For me, Frank's is kinda like the Budweiser of Hot Sauce. It's reliable and gets the job done, especially when you do Buffalo wings, but there are so many more interesting and flavorable ones out there...

Has anyone ever had a Ghost chile?

I have heard it is the only edible thing on the planet that is akin to dying. A guy that I work with said he puts a ground up sliver of it in his chili. He said it takes over an hour to eat a bowl of it because it is so insanely intense.

There's an awesome little Mexican restaurant and grocery near my house that makes its own varieties of hot sauce. (It's one of those places where I may be the only native English speaker in the joint.) You generally have to ask for them, since they can be pretty intense. Very tasty, and they run the range from smokey and hot to a feeling like you've just eaten a cactus.

The Asian chili sauce is good. The track I work at has stir fry, it was pretty bland until I found that sauce. I coat the whole bowl with it and it's quite good now.

Anchor Bar sauce is pretty good. I remember Dinosaur BBQ in Syracuse having some pretty good sauce too.

A friend of mine was nibbling on one the other day. It took him over four hours to finish it. And he pops sliced jalapenos as a snack, so he's a lot more spice-tolerant than most. He offered me a bite. I didn't dare.

I like Crystal hot sauce and Cholula and SriRacha is also good. Thai chili sauce for chicken (the clear orange stuff) is good on fried foods like egg-rolls. I also like Malaysian chili sauce - the sweet stuff that looks like ketchup. It's declicious with fried calamari or fried fish.

I just read something on the internet about Ghost Chile's. They are on average 300-400 times hotter than a Jalepeno. Good grief! What is the point?
