Good summary on when early votes will be counted.
tl;dr: PA and WI are the only swing states that prohibit processing prior to election day, so most early votes will be tallied that night. There will still be stragglers, especially in states that count ballots received late that were postmarked on time, but there's a decent shot we'll know who won that night.
