Re: USCHO Cooks: Open Your Mystery Basket.

I ended up freezing only 8 pounds, which is a completely manageable total. Does she do the whole water-bath canning thing? That is intimidating to me for some reason.

She does. Doesn't add pectin so it's not real jam, kinda runny but great on pancakes, french toast, ice cream, etc. She froze a bunch too.

I'm also thinking I can make Larabars, the popular fruit and nut bar, at home. Looking at their ingredients, they're a simple mix of dates, some kind of nuts, salt, and maybe another dried fruit or chocolate chips. All I'd have to do is buzz all ingredients in a food processor, then dish out into 1/4 cup portions.

Re: USCHO Cooks: Open Your Mystery Basket.

I had a cupcake disaster yesterday. I was using a new recipe from some online source I hadn't used before (first clue) and the directions were very odd, but I followed them (normally you cream the fat, then add eggs, then add dry ingredients to that, alternating with liquid, and barely mix). It also had a LOT of baking powder. They turned out terrible. Didn't taste anything like strawberries, and the texture was odd, and they were all muffin-toppy. Luckily, the frosting was fine, so I just made a different strawberry cake and used the frosting. Sometimes the Internet sucks. :)

I have a family recipe for beans but its pretty my h a family secret. :(

Re: USCHO Cooks: Open Your Mystery Basket.

Tried a pretty good jalapeño popper appetizer on the grill.

You need a grill rack that will allow the pepper to stand up vertically.

Cut the top off the peppers and core out the seeds. Stuff the pepper with cream cheese, then wrap a stick of extra sharp cheddar with some half cooked bacon. Stand the peppers vertically in the grill rack and cook over medium heat until the cheese is melted, bacon is cooked and pepper is soft... About 20 min.

Yum!!!!

Edit: you have to stuff the bacon wrapped cheddar into the pepper too before grilling!!!

This is a project for summer: slow cooked Boston baked beans
One trick you may want to try is to gently boil the beans for about 10 minutes before mixing them with everything else/putting them in your pot. I stand next to my boiling beans and skim off all the scum while they boil and then give them a good rinse.

My secret family baked bean recipe is more or less the same recipe you'll find included with a bean pot

Does it include Terriers, Eagles, Huskies, and Red Dye?

Holy smokes. The nacho brats from a local meat shop are incredible.
Have you tried the butcher shop that sells the gummi brats? To be honest, the idea of them kind of horrifies me, but I hear great things about them.

Our favorite local brats are the Pappy's Pickle Brats from McDonald's Meats in Clear Lake. They are excellent, as is everything from McDonalds. We also had Maple Wild Rice Blueberry Brats that were very good, and Bourbon Peppercorn. Also picked up Apple Cinnamon Bacon, which was simply incredible.

I just looked up the name of the place, it's Grundhofer's, located in Hugo. http://www.grundhofers.com/

It looks like they have a whole list of those flavored brats, including that Apple Cinnamon and Bloody Mary. We don't have much for those local butchers in the south metro, just Von Hansen's, and that's just a small-ish chain.

Run over to Greg's just south of Hampton. Not too bad of a drive from where I think you live...

Yeah, that's not far; I'm in Farmington. I'll have to look into it. I forget that there's civilization to the SE. Normally I just think of what's out that direction as farm fields that eventually become Paint Thinner Nation. :)

That BFE to your southeast is my homeland. :D
On the non-paint thinner side of the river.
