I don't think I have the long term commitment level necessary for this chef/levain thing. I'm already a day behind, and I've only had it for 3 days. This is why I only have a goldfish to take care of. Even he doesn't mind if I forget to feed him for a few days. :p

Just baked Pepparkauka for the funeral lunch of a dear lady from church. 28 years ago or so she called me after I brought these to church. I didn't really know her yet but that didn't deter her at all. The cookies tasted just like her mother's and she wanted to know what the secret ingredient was because she had never managed to make hers taste like her Mum's. Seeing as she had come over on the boat from Sweden I was really flattered. Every yr since then, when I baked for Christmas, I gave her a little package of these.

Not really the season to make them but soothing to do as I thought of her. RIP Alice. You were an awesome lady!

Fish Tacos...


Yellowtail Snapper blackened on flour torts with ranchero sauce, lettuce and fresh mango. MMMmmmmm.... :)

Rum (Plantation Old reserve) & Coke as an accompaniment.

First try at creating steam in my oven worked pretty well (although the bread wasn't proofed enough). Was surprisingly simple and resulted in a very good crust.

Lil les is graduating in about 5 weeks. Grad party inviting ~100ish. Expecting about 80ish. looking for ideas. I tend to shy away from stuff that is 'usual'. Like stuff you can prep and then throw together the day of the party. It is going to be a really wild week before hand. Planning on making some things and freezing if I can (do a lot of this for a huge Xmas party we give) but a lot of summer fare is not freezable. Thoughts?

Like stuff you can prep and then throw together the day of the party. It is going to be a really wild week before hand. Planning on making some things and freezing if I can (do a lot of this for a huge Xmas party we give) but a lot of summer fare is not freezable. Thoughts?

Get a caterer :) Seriously, thats a lot of people to feed even if its just finger food

Can't do that. We had 70 for my FIL BD a few yrs ago and no prob. Planning on saying yes to anyone who asks what they can bring. I know my family will bring stuff.

It's been 4 weeks since I baked a dessert. Baked a simple French apple cake from a Dorie Greenspan book - <a href="http://www.epicurious.com/recipes/food/views/Marie-Helenes-Apple-Cake-361150">Marie Helene's Apple Cake</a>. Still working on freezer fruit. A few bags of strawberries and apples left.

Enchiladas? You can make large pans of them ahead of time, and just pop them in the oven on the big day, as needed.

I really liked the chilled corn salad I made for my party last weekend. Super easy and can make ahead of time.

Increase the recipe as you need, this quantity was great for my 9 guests.

1 can (12 oz) of corn drained
1 small onion diced
1/2 cup diced bell pepper (I used red and green)
2 Tbsp fresh parsley minced
2 Tbsp apple cider vinegar
1 Tbsp vegetable oil
1/2 tsp salt
1/4 tsp pepper

mix everything together, chill at least 4 hours.

Maybe pulled pork or chicken sandwiches? Easy enough to make beforehand, and doesn't lose any quality reheated.

Fruit salad is an easy side to prepare before hand, then assemble later. Or something like corn salad, bean salad or broccoli slaw.

If you want something in addition to (or instead of) cake, make trifle in one (or more) of those big foil pans. Easy enough to prep ingredients beforehand, usually very little baking, easy to assemble last-minute, and it feeds a ton of people. Even something simple like cake or brownie pieces, whipped cream, and strawberries.

Biggest crowds I usually cook for are 10 people, so not a lot of experience. :)

Hmm, trifle sounds like a bang up idea!

Never heard of corn salad. Eastern bias I bet.

Made some blackened Cobia sandwiches on pan-toasetd sliced sourdough with ranchero sauce, lettuce & tomato.

Side of seasoned fries and Oberon in a frosted glass.


Dear God, but that was amazing.

I smell like a seafood joint and there's a haze in the house (from the blackening) and I don't even mind... :)

I finally caved and bought 2 cans of SPAM last time in the store... Just did this out of curiosity mostly... Now I have no idea what to do with them :p

The internet is full of ideas... Anyone have any personal experience? Doesn't need to be complicated... Was just thinking something along the idea of SPAM and eggs or Grilled Cheese and SPAM...

My mom used to fry it up, put a Kraft single on it, add a tomato slice, and put it on an onion bun - just a fancier grilled cheese, I guess. Otherwise, it was used as a breakfast meat.

This is the easiest one that I know of, that doesn't involve overly salty "cheater" ingredients like Campbell's soup.

Regardless, you'll probably have to set aside most of a day to make enough for 100. Not gonna lie, those pulled pork/chicken sandwiches are sounding like an excellent idea. ;)
Thanks! Those sound rather yummy. I don't know if I could manage 100 but I might manage some for dinner!
