Been doing a lot of baking for a tournament this weekend, and was going with the Cinco de Mayo theme. Had a big macaron fail on Tuesday with the rainy weather.

Made pan de elote last night, and used frozen corn - should have defrosted it first. It solidified the butter. I had to heat the batter in a double boiler to get the butter to room temp again before I baked it, but I think it worked out OK. I was going to do Tres Leche cake, but realized this morning that we won't have refrigeration. doh! Maybe something churro-related.
