Is cheese allowed or will this be lasagna in name only? My mom would make the occasional spinach lasagna that was just phenomenal. You can find many, many recipes for the dish on the line.

Just vegetarian - not vegan. And that's the problem. There are many, many recipes. I can easily google recipes, but there is no one to tell me if they're actually good (recipe reviewers are generally worthless).

I'd point you to Giada, but a lot of her newer recipes are just not that great. If you find a spinach ricotta lasagna recipe from Everyday Italian, it would probably be very good. Or something from Batalli. Not to focus in on just FN chefs, but in a pinch I rely on the older shows.

I'd do a sauté of peppers, onions, white beans, spinach, and mushrooms. Layer that with bechamel sauce, noodles, red sauce, and mozarella cheese. We make this when we have a crazy week coming up because we get about 10-12 servings of it.

Smitten kitchen lasagna is what we use as the base for our ideas.

Yes, I should tell my brother that Christmas is cancelled. :p He's an acceptable vegetarian, because he is an absolutely 100% non-judgemental vegetarian (and has been so for 25+ years).

I usually do 1 1/2 times the squash, 4-5 onions rather than one.

You had me at fontina. That looks delicious. I'm thinking I might want to go with a red sauce lasagna, though, since our meat lasagna is red. I might make that one for myself sometime, though.
 
Sponge toffee, peanut brittle, and cashew brittle are done as gifts. Friday I'll make more, along with a double batch of chocolate toffee no bakes. I am working out cookie/candy swaps with friends this year and it's fun.

Hubby's family does a gift exchange where we each draw a name. I've been told the uncle I drew likes snack mixes and homemade cookies. He's getting my family's chex mix (mom gave it to neighbors as a gift every year), and various cookies that I'm busy making. Opened up my Southern Living cookbook and skimmed through the cookie section for something that looked good and is a bit different. Made Pecan pie bars last night. They are delicious and I need to pack them into a container to give away before I eat them all myself.

So I burned the candy I made a couple nights ago. Apparently, my candy thermometer needs to be replaced or recalibrated.
