USCHO Cooks: Are you our Top Chef?

Re: USCHO Cooks: Are you our Top Chef?

I’ve made this several times before, but I still think it’s one of Alton’s best recipes.

https://www.foodnetwork.com/recipes/alton-brown/grilled-pork-tenderloin-recipe-1917672

Tonight we tripled the chipotles and baked it covered since we didn’t have time or motivation to fire up the grill.

It’s just so farking good.

Was looking at this recipe yesterday. We use Alton's skirt steak recipe a few times a month (and not just on steak). When we make it, we throw in a bunch of cilantro, so this seems very similar. Our slaughterhouse just had a bunch of fresh tenderloins so I bought 3. Made one with my favorite BBQ rub. Will be doing this with the second.

Trader Joe's frozen fish is shockingly good. Tuna, coho salmon, swordfish, etc, but I wouldn't necessarily say it's cheap. Probably among the most expensive items in the store, actually (short of the meat case). I think the coho is $11.99/lb and the tuna and sword are 10 or 11-ish.

Good tip. I will try this.

Having the family over for an early Father’s Day.

Smoked pork butt (first overnight smoke)
Ribs
My Dad’s world-famous beans
Smokey bacon potato salad
Scratch cornbread

I currently have half a stove of bacon cooking. My Facebook friends can see it’s literally half my stovetop. 😉

So true. Chatty food bloggers are the worst.

Amen. That is so perfect.

Re: USCHO Cooks: Are you our Top Chef?

I feel like making chocolate chip cookies and adding one raisin to each cookie, just to mess with people.

Re: USCHO Cooks: Are you our Top Chef?

Was over at our neighbors’ for her birthday and someone brought over bananas foster Chex mix with a whole bunch of rum in it. Move over puppy chow, holy crap that stuff was good.

Re: USCHO Cooks: Are you our Top Chef?

I'm in charge of my church coffee hour in a couple weeks, and I don't think I want to provide any baked goods this time around. My cravings lately are salty-crunchy, so I want to go off that. And if I go with bar snacks, here's what I plan on bringing:

Peanut butter pretzels
Regular pretzels
A gluten-free option (trying to be considerate here)
Roasted, salted almonds/cashews/pecans
Potato chips?
Sweets and beets?
Pickles?

Re: USCHO Cooks: Are you our Top Chef?

Add some veggies. Raw with ranch for dip. CHeap and crunchy.

I went over my friend's house yest and picked 8+ cups of black raspberries. They are yummy. Trying to figure out which of the many things possible that I want to do with them. Thinking a pie, jam and maybe clafoutis with raspberries

Make a grunt. Or a cobbler.

Re: USCHO Cooks: Are you our Top Chef?

Making pie right now. It was cooler and rainy when I started. It is now HHH> The pie crust is a disaster- it is butter based. I even froze the butter but the dough is so soft I need to keep it in the fridge and keep putting it back between each step. It won't even come off the parchment :(

Re: USCHO Cooks: Are you our Top Chef?

A friend of mine gave me some strawberries that she picked from a local farm (not even 5 miles away from me). They were the best strawberries I've had in quite a while.

Re: USCHO Cooks: Are you our Top Chef?

Ice cream is a messy food, and I couldn't have been happier tonight. Out with a Mama bear tonight, and she treated me to a sundae. Whipped cream, hot fudge sauce, and more down the front of my shirt.

Re: USCHO Cooks: Are you our Top Chef?

The salty snacks didn't go over well at church. I was encouraged next time to bring sweet things. I was also told that even though I can't bake right now because of my foot, that they'll take Oreos too. In other words, I think I let perfect be the enemy of the good. I couldn't bake, so I didn't bring anything sweet.

Re: USCHO Cooks: Are you our Top Chef?

Made a delicious and easy pork roast in the slow cooker this weekend. It will be added into my regular rotation.

Put in slow cooker:
3/4 cup red wine
1 cup water
3 T soy sauce
1 pouch onion soup mix
black pepper

Mix together, add pork tenderloin, turn to coat all sides.
Top pork with minced garlic. Let cook on high 4-6 hours

I might cut the amount of soy sauce next time, it was a little too salty
