Are they finicky about how well you center the pan On the elements?

Any downsides?

We're not in the market but if we can, we're going for electric or induction next

Yes you can use cast iron since iron is magnetic. Only downside is your pots and pans need to have a magnetic metal element to be heated up, so you can't use Pyrex or pure aluminum directly on the elements

Never had issue with placement on the elements.

Water boils ridiculously quickly and the elements cool off quickly, so they're pet/kid safer, too.

also if your current stove is gas be prepared to have a new 40-50 amp 240v circuit run to you new induction stove/cooktop

My only concern is the glass top. I'd be so worried about scratching it or god forbid, dropping cast iron. We love using cast iron so it could be a big change. I don't think we've ever used Pyrex on the range. But we have several aluminum pans (including our beloved popcorn pan *sniff*) but I am 95% sure our MCP stainless are ok on induction.

Again, I don't think we're in the market since we have the world's most simple gas stove that should last another 15 years. Only the membrane buttons are going to fail eventually.

Yeah, that's the big catch for most.

I'd be curious if we could. I know our kitchen has three separate 20 A circuits. But I'm not sure the gauge on any of the wires. I am confident we don't have the non-standard plug that usually comes with one of those 40+ A circuits.

Are you sure? We’re a few weeks away from GOp saying they run on aborted fetuses.

there will be a bill banning anything but has introduced in a red state mark my words
 
I have a glass cook top, its all scratched to shit, it works like new though. If looks are a concern don't make popcorn on it :) I installed it in 04 so its been around awhile.
 
So with all the twitter discourse on gas vs electric, I saw an ad for a startup that put a 3kWh lithium battery in their induction range so it could heat up faster.

There is like no way I'm putting a 3kWh battery in the middle of my house, inside an appliance that is designed to get very hot and repeatedly temperature cycle, next to abundant sources of water. I just think that's a house fire that will always end with tragedy and/or total loss of the house.
 
Our electric glass-top died, and we replaced it with an induction primarily because we have little kids and my wife liked that the top doesn't stay hot for as long after you are done cooking. I had never used one before and had never really read about them, so I didn't have any real expectations. Holy crap is it awesome!!!! I was always a gas guy, but I would never go back to gas again.

The pots don't have to be centered for it to work, but obviously, only the part of the pan over the inductor is going to be heated (same as if you didn't center your pan on electric or gas). You can use cast-iron. About the only pans that don't work are all-aluminum types - but always check the label when buying a pan.

Some of the climate tech people are insane and dangerous
 
I have had a glass cook top for almost 15 years now. Cast iron is fine on it you just need to be gentle. If you really scuff up the surface, it just doesn't get as hot and that's annoying. You can replace them fairly easily but it isn't cheap. Basically, don't be an animal with your pots n pans and you're mostly fine.

When these things happen, the people will more often blame the party that hold the White House. Qevin knows that, he’s old enough to see and learn from prior split houses and branches. Newt exploited it, and then the guy whose name I forget that did the same during Pres. Obama’s term. Blowback always came against the President.
