I'm looking for opinions or explanations on why a coach would choose to defend the far net and require his/her team to have the long change for two periods each game.

The simplest answer I can think of is the coach believes their team has the better/faster skaters and/or more stamina. The coach's team has the long change but so does the opponent.

it's a game while the sun is up and the sun would be in goalies eyes for 2 periods, or maybe the sun is a factor at it's worst during the second period?
bad ice on one end and the coach is trying to take best advantage of it?
game is outside and the coach is trying to take advantage of the wind conditions.

Seriously, there were rumours that when the old Montreal Forum was demolished and the goods and chattels auctioned off for charity, the two nets proved to be of slightly different dimensions......

at the old barn the Gophers men's team played in, there was a large windowed area on the west end, if there was a day game the last period was played with the goalies switching ends half way so as not to give one team an advantage because the sun would be in the eyes of the goalie on the east end ,especially during the 3rd period
that might sound like the Gophers were righteous and fair, in reality, if they hadn't done this it would have been the Gopher goalie that would have had the sun in his eyes during the third period.
there was also a big difference in the background, on the east end there was a dropped ceiling that was very well lit up and white, on the west end it was very dark and dreary, there is a reason it was called a barn, it was like an old airplane hanger

The original NHL Minnesota North Stars in the late 60's and/or early 70's choose to defend the far net for two periods. All though it is the same for both teams, it allows the forwards on the change to get into the offensive zone faster and makes for a longer change for the opposing defense. On the power play it is easier to keep the defenders trapped for longer periods of time while the offensive team can change easier.
